Fish Soups

Andalusian Monkfish Soup with

Saffron and Sweet Red Peppers

One could probably write a small book just on the fish soups of the Mediterranean. The Span- ish, with their love affair for all foods from the sea, boast some of the best recipes in the region. 8 s e r v i n g s

1 medium potato

5 tablespoons extra virgin olive oil

2 large red peppers, cored, seeded, and diced

2 large garlic cloves, minced

1/2 teaspoon saffron, crushed to a powder

1/2 teaspoon ground cumin

1/2 teaspoon paprika

1/2 teaspoon cayenne pepper

2 ripe tomatoes, peeled, seeded, and diced

8 cups fish broth

1 pound monkfish or any other firm white-fleshed fish fillets Salt and freshly ground black pepper

Place the potato in a small pot of salted water over high heat and bring to a boil. When the potato is soft, about 20 minutes, remove from the pot, reserving the potato water. Place the hot potato (do not peel) in a food processor and pulse on and off while drizzling in 1 tablespoon olive oil and 2 tablespoons of the reserved potato water. Heat 2 tablespoons olive oil in a large soup pot over medium heat. Add the peppers and garlic and saute for about 1 minute, until just soft. cayenne and cook, stirring, for 1 minute to release their aroma. Add the tomatoes and their juices, then the potato puree, and stir until smooth. Pour in the stock. Raise the heat to medium-high and bring to a simmer. Add the fish. Season with salt and pepper to taste. Simmer for 6 to 7 minutes, until the fish is cooked through. Remove from the heat, pour in the remaining 2 tablespoons olive oil, and serve.
